We have a couple of Mac users in our company who would like to have SSO in the SAP GUI, but unfortunately I have not found how they can issue themselves an SSO certificate, do you have any experience with this?

You don't need a certificate. The Mac can be joined to Microsoft Active Directory and you can use a Kerberos ticket for SAP GUI on macOS. The user will get an SSO experience. Many of our customers use our product for this functionality.
