1. We do not have emails for all users in our EC. Some users have a default email like "dummy@dummy.com". is it mandatory that every user in EC have a unique and valid email?
2. is there a documentation for "transformations" in IPS?
Also if you want to use principal propagation to the ABAP stack the e-mail needs to be unique to find the real S4 or ECC user id. Further if you are not sending e-mail and set initial password and do not require self service for password resets you can configure any e-mail in IAS tenant.
