I need to customize the Fiori preview theme for CAP project by adding navigation menu on the left.

what are the option for customization this theme?

If your deployment target is the BTP Launchpad you would need to implement a Launchpad Plugin for such a functionality. Isn't it sufficient to have separate tiles for your apps and use that for navigation?
