Technically it is not required to unmask the data. Reason is, when you are masking a data set that means you already have the unmasked data in your source system. Reason masking is being done so that you can ensure sensitive data (example SSN, Credit Card info etc.) ins not exposed to the outside world while sharing information outside for review etc.
If you want to use the actual source data you already have it and use the original source to load the data into target system during the load cycle. This is probably the reason sap data services does not have this transform to unmask as it is technically not needed.
