In an inherited product, it was previously using data hub on CCV1. Since we have migrated to CCV2 we switch over to SCI.
I can we "uninstall" all things datahub from our code base? I have not found a guide for this so far.

Is simply removing all the extensions having "datahub" word in its name from manifest not working?

No that did not work. Seeing the following in the build logs
Evaluate Data Hub services and images
Prepare Data Hub workspace
Maybe you've custom ext which still points on databhub extensions (see extensioninfo.xml)
