I am trying best to answer this query , you might get all details in older SAP community posts related to this questions , but you have to search it accordingly.
Customization Areas in SAP PP :
Material Types /MRP Strategies /MRP Types /Lot Sizes /Customized Prod. Order Types also you can do customization in Material Creation and BOM Creation Tcodes using custom Programs.
You can change print control of Prod. orders using custom program.
Even some of companies have their customization over MPS/MRP as well as Prod. Order Execution Process based on customized transactions , so basically they never use std. tcodes for Planning as well as Shop floor execution.
For Non Customization --> Most of the areas you can do customization , in case of area where SAP defined std. rules that has to be std. then you cant make customization.
like Std value keys can be defined as 6 only in Work center.
For SAP PP Tables : You can get SAP PP tables over internet , with use of some technical changes , you can add custom fields in std. tables but again scope is limited , its not possible for every SAP PP tables.
