Hi Experts..Our SAP system timezone is in UTC. I have a general question - will the requested delivery date on sales orders will also be in UTC?

Those dates, goods issue date and time or scheduled date and time displayed in a sales order, should be expressed in the timezone of the plant, check your plant(s) time-zones.
