Controller Replacement in Fiori Adaptation Project

Hi Community,

I am trying to generate an adaptation project to extend the standard Fiori app of GR4POS1 on VS Code, My requirement is to add custom fields in the items table, I am struggling to find a way how to add the custom fields in the model as the standard app relies on local JSON Model in its controller where fields have been added. Is there a way how we can replace  standard controller with a custom extended controller in an adaptation project?
