In my case, my API Manager instance was unstable at the time.Problem was gone once SAP fixed the issues with the platform.

I wanted to add, that the connection provider is correctly configured and the connection tests works fine. Also when creating the proxy, it fetches the metadata correctly from the service catalog.Thanks in advance.
